How does deep frying work?

Browse By

Deep frying involves cooking food by submerging it in hot oil. The ideal temperature is around 350–375°F (176–190°C).

Submerge a food in oil at this temperature causes its surface to cook almost instantly. As it cooks, it forms a type of seal that the oil cannot penetrate สมัคร ufabet

At the same time, the moisture inside the food turns into steam, cooking the food from the inside. The steam also helps keep the oil out of the food.

However, you have to have the right temperature:

  • too low and the oil will seep into the food, making it greasy
  • too high and it can dry out the food and oxidize the oil

What to do when deep-frying goes wrong?

  • If the oil starts to smoke, turn off the heat and leave the oil to cool down.
  • If the oil catches fire, turn off the heat and smother the flames with a lid, large baking tray or a fire blanket – or use a fire extinguisher, if you have one.
  • Never spray the fire with water; this will cause the flames to spread.
  • Call the fire brigade as soon as it is safe to do so.

To dispose of the oil safely, leave to cool completely, pour into a jug, then back into its original bottle. Never pour the oil down the sink, unless you want blocked pipes!
